Sourced from orchards between 1,200 and 2,000 m. Picked at full colour, never green-picked for shelf life. That is where the sourness comes from.
Eleven days of sun
Trays go out at dawn and come in before the dew. No dehydrators, no ovens. Slow drying is what makes the texture chewy instead of brittle.

Every plum is checked by hand. Bruised fruit goes to the compost, not the batch.

Sun-dry on bamboo
Laid out on woven trays, turned twice a day, brought in before evening damp.

Cure with the masala
Folded through chilli, jaggery and the two salts, then rested 48 hours to marry.

Weigh, seal, ship
